Creamy Egg Bites similar to the sous vide breakfast treats sold by Starbucks, but at a fraction of the cost. You can customize these any way you want. Just remember to give everything a good stir prior to steaming in the Instant Pot to make sure the add-ins don’t settle to the bottom of the pan and cause the egg bites to fall apart when removed from the pan.
🍴For one tray, I use:
- 4-5 large eggs, beaten with salt and pepper to taste (use wire whisk)
- Splash of milk or half-and-half (some recipes call for 1/2 cup cottage cheese, but I haven’t tried that.
- Diced, sautéed vegetables, such as onion, bell pepper, zucchini, mushrooms, spinach
- About 1/2 cup (or more to taste) cheese (Swiss, gouda, cheddar–whatever you like).
To mold the egg bites, I use these silicone egg bite pans: sprayed very lightly with cooking spray, and they pop right out.
