Air Fryer Roasted Greek Chicken

I am all about easy recipes, especially on busy weeknights. This is one of my favorite things to do with the Ninja Foodi. The chicken skin comes out crisp and delicious, the chicken meat is tender, the fat is drained out nicely, and the cleanup is ridiculously quick and easy. Dinner done in only about 35 minutes.

I used bone-in, skin-on chicken thighs, because they really are the best-tasting, in my opinion. I gave them a spray of olive oil, and then a good coating of Greek seasoning on both sides of the chicken. I love this seasoning so much on pretty much everything, but you can use any seasoning you prefer.

Preheat your Ninja Foodi/air fryer to 390 degrees F for five minutes. Spritz your air fryer basket with some olive oil, and add the chicken in a single layer. I had more chicken than could fit, so I used the layered insert that came with my Foodi. This helps to keep air circulating around the meat so you get that nice, crisp skin. If you have room, add one or two whole baking potatoes, pierced with a fork, rubbed with a little shortening or olive oil, and sprinkled with salt. The cook time is roughly the same.

Air crisp/air fry for about 30 minutes, or until the meat registers 165 degrees F. I use an instant-read thermometer for this, since it’s ok to open the Foodi during cooking. I didn’t bother to flip the chicken over, but I simply loosened it up and moved it around about halfway through the cooking time.
